- PublicationAlternative Protein Sources : Balancing Food Innovation, Sustainability, Nutrition, and Health: Proceedings of a Workshop(National Academies Press, 2023) National Academies of Sciences, Engineering, and Medicine; Health and Medicine Division; Food and Nutrition Board; Food Forum; Nicholson, AnnaAlternative protein sources, which can be derived from plant and animal cells or created by precision fermentation, can have health, environmental, socio-economic, and ethical impacts. With a variety of types of alternative proteins being developed and available on the market, consumers, regulatory agencies, manufacturers, and researchers are faced with many different considerations. The National Academies Food Forum hosted a workshop that took a multi-sector approach to explore the state of the science on alternative protein sources as they relate to issues around diet quality, nutrition, and sustainability. The workshop also examined how alternative protein food processing innovations can be balanced in a way that optimizes nutritional content, affordability, and accessibility. This Proceedings of a Workshop summarizes the discussions held during the workshop.

- PublicationBiomaterials in Food Packaging(Jenny Stanford Publishing, 2022) Yusuf, Mohd; Khan, Shafat AhmadBiomaterials in Food Packaging presents up-to-date research on the applications and development of the packaging materials that originate from biological resources. It discusses the advances made in bioactive, biodegradable, edible films, and nano-based smart materials for food packaging applications that can be a substitute for their synthetic counterparts to enhance the food's shelf life significantly. It not only encompasses a comprehensive overview of environment-compatible and biodegradable biomaterials but also highlights the recent trends in their applications in food packaging. The book is a valuable reference for researchers, undergraduate and postgraduate students, academicians, educators, industry scientists, and general readers seeking bio-based materials for food packaging applications.
- PublicationFood Adulteration and Food Fraud(Reaktion Books, 2020) Rees, JonathanWhat do we really know about the food we eat? A firestorm of recent food-fraud cases, from the US honey-laundering scandal to the forty-year-old frozen “zombie” meat smuggled into China, to horse-meat episodes in the United Kingdom, suggests fraudulent and intentional acts of food adulteration are on the rise. While often harmless, some incidents have resulted in serious public health consequences. At the heart of these dubious practices are everyone from large food processors to small-time criminals, while many consumers are becoming increasingly concerned about this malfeasance. In this book, Jonathan Rees examines the complex causes and surprising effects of adulteration and fraud across the global food chain. Covering comestibles of all kinds from around the globe, Rees describes the different types of contamination, the role and effectiveness of government regulation, and our willingness to ignore deception if the groceries we purchase are cheap or convenient. Pithy, punchy, and cogent, Food Adulteration and Food Fraud offers important insight into this vital problem of human consumption.
